[extractor/youtube] Define strict uploader metadata mapping (#6384) 
New mapping:
```
channel -> channel name
channel_id -> UCID
channel_url -> UCID channel url

uploader -> channel name (same as channel field)
uploader_id -> @handle
uploader_url -> @handle channel url 
```
